I created this side dish to accompany my Pork Roast with Mashed Potatoes & Gravy Dinner. I had them left over from a precious meal & wanted to use them before they spoiled, I had 2 small jars of Roasted Sweet Red Peppers & thought they would compliment the broccoli & onions perfectly, all the while adding a bit of fiber to the diet. They were quick & easy to prepare, & not only did they look appealing they tasted great also.

This side dish of vegetables went very well with the Pork Roast and mashed Potatoes, with a bit of gravy over the top created from the drippings of the pork Roast.

Ingredients

2 lb
fresh broccoli floweretts
2 jar(s)
roasted sweet red peppers (16 ounces)
2 large
sweet onions, sliced & seperated
1 tsp
steak seasoning
1 1/2 Tbsp
coconut or olive oil

How to Make SAUTEED BROCCOLI W/ ROASTED SWEET PEPPERS & ONIONS

Step-by-Step

  • 1Wash broccoli in a colander & cut larger pieces into smaller pieces, rinse under cold running water.
  • 2Cut the onions in half and then slice into medium slices, and separate into rings, then add to broccoli.
  • 3Drain the roasted red peppers, then using a cutting board cut into medium size strips.
  • 4In a large skillet, Heat the oil over medium high heat, & then add in the broccoli and onion mixture, sauté about 4-5 minutes.
  • 5Add the roasted sweet pepper strip, and steak seasoning, then stir till mixed together and heated through, until veggies are al dente, or as desired, an additional 4-5 minutes or so, or as desired.
  • 6Serve while still hot, can add shaved Parmesan Cheese over the top while veggies are still hot, if desired or serve as is. Excellent side dish.
