margie's garbanzo bean salad

Inspired by my cousin Margie....lovely flavors...and trust me, you just can't stop eating it.

Ingredients

  • 4 cans garbanzo beans....in water and salt
  • 1 medium tomato, seeded
  • 1 medium cucumber, seeded
  • 1 small red onion, diced
  • 3 - garlic cloves, smashed
  • 1 can black olives, small
  • 1/2 cup olive oil
  • 3 - limes, juiced
  • 1/2 cup cilantro, chopped
  • - salt and pepper

How To Make margie's garbanzo bean salad

  • Step 1
    in a large bowl, place garbanzo beans ( drained and rinsed)...start smashing with the olive oil.
  • Step 2
    add the smashed garlic cloves, keep smashing until you have half of all the garbanzo smashed.
  • Step 3
    add in the rest of the ingredients and combine well. salt and pepper to taste...best if chilled a few hours or over night....ENJOY....delicious.
