I love Cole slaw, but the fat is unbelievable in it. This is a healthy Coleslaw recipe using a vinaigrette dressing. I came up with it doing some experimenting in the kitchen tweaking a recipe. It is really delicious. You can also use the dressing on Broccoli slaw, green salads, top burgers,and chicken sandwiches with it etc. hope you all enjoy it.

Ingredients

  • NOTE: IF YOU LIKE CREAMY DRESSING. ADD A LITTLE LOW FAT MAYO OR YOGURT TO MIX
  • 3 tablespoons dijon mustard
  • 1/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 3/4 teaspoon celery seed
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1 - red bell pepper chopped
  • 1 cup chopped sweet onion,or 1/4-1/2 cup chopped scallions depending on your taste.
  • 14 ounces bag of cole slaw (shredded cabbage and carrots)

How To Make skinny cole slaw by nor

  • Step 1
    Combine the Dijon mustard, Red wine vinegar together. Stir in the olive oil. Add the sugar,Salt,pepper,celery seed,onion powder,and parsley.Combine well and put in fridge.
  • Step 2
    Chop the Red bell pepper,and sweet onion. Pour the bag of Cole slaw in to bowl. Add the Bell pepper and onion. Pour dressing over coleslaw mix,and combine really well. Refrigerate for several hours 6-8 or over night. Toss before serving. Note: Also use the dressing on Broccoli slaw,and green salads.
