Ingredients
- 2 teaspoons olive oil
- 2 pounds zucchini, cut into half-moon slices
- 1/4 cup onion, chopped
- 3 - plum tomatoes, cut into chunks
- 2 tablespoons grated parmesan cheese
- 1/2 cup reduced-fat, shredded italian-style cheese
- 1 teaspoon garlic powder
- 1-1/2 teaspoon italian seasonings
- 2 tablespoons italian-style bread crumbs
How To Make garden delight baked zucchini

Step 1Heat oven to 375. Spray a 2-quart baking dish w/ cooking spray. Heat oil in skillet over med-high heat. Saute zucchini and onion, 5 mins.

Step 2Stir in tomatoes, parmesan cheese italian cheese, garlic powder and italian seasonings. Cook, stirring for 3 mins.

Step 3Spoon mix into baking dish. Sprinkle w/ bread crumbs. Bake 30 mins, or until golden and cooked through.
