Ingredients

2 tspolive oil

2 lbzucchini, cut into half-moon slices

1/4 conion, chopped

3plum tomatoes, cut into chunks

2 Tbspgrated parmesan cheese

1/2 creduced-fat, shredded italian-style cheese

1 tspgarlic powder
-
1-1/2 tspitalian seasonings

2 Tbspitalian-style bread crumbs
How to Make Garden delight baked zucchini
- Heat oven to 375. Spray a 2-quart baking dish w/ cooking spray. Heat oil in skillet over med-high heat. Saute zucchini and onion, 5 mins.
- Stir in tomatoes, parmesan cheese italian cheese, garlic powder and italian seasonings. Cook, stirring for 3 mins.
- Spoon mix into baking dish. Sprinkle w/ bread crumbs. Bake 30 mins, or until golden and cooked through.
