Ingredients

2 tsp
olive oil
2 lb
zucchini, cut into half-moon slices
1/4 c
onion, chopped
3
plum tomatoes, cut into chunks
2 Tbsp
grated parmesan cheese
1/2 c
reduced-fat, shredded italian-style cheese
1 tsp
garlic powder
1-1/2 tsp
italian seasonings
2 Tbsp
italian-style bread crumbs

How to Make Garden delight baked zucchini

Step-by-Step

  • 1Heat oven to 375. Spray a 2-quart baking dish w/ cooking spray. Heat oil in skillet over med-high heat. Saute zucchini and onion, 5 mins.
  • 2Stir in tomatoes, parmesan cheese italian cheese, garlic powder and italian seasonings. Cook, stirring for 3 mins.
  • 3Spoon mix into baking dish. Sprinkle w/ bread crumbs. Bake 30 mins, or until golden and cooked through.
