Ingredients

  • 2 teaspoons olive oil
  • 2 pounds zucchini, cut into half-moon slices
  • 1/4 cup onion, chopped
  • 3 - plum tomatoes, cut into chunks
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup reduced-fat, shredded italian-style cheese
  • 1 teaspoon garlic powder
  • 1-1/2 teaspoon italian seasonings
  • 2 tablespoons italian-style bread crumbs

How To Make garden delight baked zucchini

  • Step 1
    Heat oven to 375. Spray a 2-quart baking dish w/ cooking spray. Heat oil in skillet over med-high heat. Saute zucchini and onion, 5 mins.
  • Step 2
    Stir in tomatoes, parmesan cheese italian cheese, garlic powder and italian seasonings. Cook, stirring for 3 mins.
  • Step 3
    Spoon mix into baking dish. Sprinkle w/ bread crumbs. Bake 30 mins, or until golden and cooked through.
