ellen's creamy bacon-garlic cauliflower
Having received a nice head of cauliflower from my organic delivery company, I wanted to try something different from my usual cauliflower with cheese. Using what I had on hand, I created this awesome dish! This will be a go-to recipe for future meals, without a doubt! 11-28-14

Ingredients
- 1 medium head cauliflower, washed and cut into large florets
- 3 or 4 slices bacon, cooked and crumbled
- 3 tablespoons butter, divided
- 1/4 cup chopped onion
- 2 large cloves garlic, minced
- - salt and pepper
- 2 tablespoons all purpose flour
- 1/2 cup chicken broth
- 1/2 cup milk
- 1-1/2 cup kraft with a touch of philadelphia triple cheddar cheese
- 1/3 cup fine bread crumbs

Step 1Cook cauliflower, covered, in boiling salted water about 10 minutes or until just tender; drain and set aside.

Step 2In a small skillet melt 1 Tbsp. butter. Add onion and saute until onion is transparent. Add garlic and cook, stirring, about 1 to 2 minutes. Set aside. In a separate skillet, or in the microwave, cook bacon to desired crispness; drain and crumble.

Step 3Melt 2 Tbsp. butter in a medium saucepan over medium heat. Stir in 2 Tbsp. flour until blended. Salt and pepper to taste. Gradually add the chicken broth and milk, whisking constantly until mixture thickens. Add cheese and blend into the sauce.

Step 4Pour cooked cauliflower into a 2-1/2-qt. baking dish. Stir in onion and garlic mixture, bacon, and cheese sauce. Top with bread crumbs.

Step 5Bake in a preheated 350º oven, uncovered, for 25 minutes or until bubbly and bread crumbs are browned. Serve with the meat of your choice or alone as a main dish.
