These are always a great hit at parties and a wonderful way to get people who don't normally love spinach to eat it. A walk around party hors d'oeuvre that can be made ahead of time to leave the hostess with more time the day of the party. They got their name because Popeye always eats his spinach out of a can - YUCK - and these are so delicious that he can eat his heart out longing for these instead!!

Quite delicious and easy to prepare, these are a great little appetizer. They're warm, chewy and crisp on the bottom. It's a yummy way to eat your veggies. Popeye would love these. They'll be a hit at your next party.

Ingredients For eat your heart out popeye spinach balls

  • 2 box
    spinach, 10 oz each, moisture squeezed out completely
  • 4 lg
    eggs, beaten
  • 1 lg
    onion, minced
  • 2 c
    Pepperidge Farm herb seasoned stuffing mix (be sure the bread is crumbled, not the large cubes)
  • 1/2 c
    Parmesan cheese
  • 3/4 c
    butter, melted
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    garlic poweder

How To Make eat your heart out popeye spinach balls

  • Cheese, stuffing, spinach, and egg in a clear bowl.

    Mix all ingredients together.
  • 12 spinach balls on a foil-lined baking sheet.

    Form into small balls. Place on a spray-lined baking dish. Cover with plastic wrap. Chill in refrigerator for at least 1 hour
  • Spinach balls baking in the oven.

    Bake at 350 degrees for 20-30 minutes. Can be served hot or warm.
