Ingredients
- 1/2 large red onion, finely chopped
- - butter or extra virgin olive oil for sauteing
- 3 cloves garlic, finely chopped
- 1 teaspoon cumin, ground
- 1 teaspoon coriander, ground
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric, ground
- 12 ounces white or baby bella mushrooms, sliced
- 1/2 teaspoon salt
- 1 medium tomato, diced
- 1/2 medium green bell pepper, diced
- 3 tablespoons fresh cilantro, chopped
How To Make easy mushroom curry

Step 1Saute onion in butter or olive oil until soft, about 3-4 minutes.

Step 2Add garlic and saute another minute.

Step 3Add cumin, coriander, chili powder, turmeric and saute an additional minute.

Step 4Add mushrooms and saute until they have released their moisture.

Step 5Add tomatoes, green pepper, and salt. Saute until peppers just begin to soften.

Step 6Add fresh cilantro and remove from heat. May be served over basmati rice, cous cous, sliced hard cooked eggs, poached eggs and toast, rice vermicelli, etc.
