easy mushroom curry

Another great recipe gleaned from a friend. Great versatility. Serve over rice, poached eggs on toast, sliced hard cooked eggs, or rice vermicelli, etc.

Ingredients

  • 1/2 large red onion, finely chopped
  • - butter or extra virgin olive oil for sauteing
  • 3 cloves garlic, finely chopped
  • 1 teaspoon cumin, ground
  • 1 teaspoon coriander, ground
  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric, ground
  • 12 ounces white or baby bella mushrooms, sliced
  • 1/2 teaspoon salt
  • 1 medium tomato, diced
  • 1/2 medium green bell pepper, diced
  • 3 tablespoons fresh cilantro, chopped

How To Make easy mushroom curry

  • Step 1
    Saute onion in butter or olive oil until soft, about 3-4 minutes.
  • Step 2
    Add garlic and saute another minute.
  • Step 3
    Add cumin, coriander, chili powder, turmeric and saute an additional minute.
  • Step 4
    Add mushrooms and saute until they have released their moisture.
  • Step 5
    Add tomatoes, green pepper, and salt. Saute until peppers just begin to soften.
  • Step 6
    Add fresh cilantro and remove from heat. May be served over basmati rice, cous cous, sliced hard cooked eggs, poached eggs and toast, rice vermicelli, etc.
