Another great recipe gleaned from a friend. Great versatility. Serve over rice, poached eggs on toast, sliced hard cooked eggs, or rice vermicelli, etc.

Stove Top


  • 1/2 large
    red onion, finely chopped
  • ·
    butter or extra virgin olive oil for sauteing
  • 3 clove
    garlic, finely chopped
  • 1 tsp
    cumin, ground
  • 1 tsp
    coriander, ground
  • 1 tsp
    chili powder
  • 1/2 tsp
    turmeric, ground
  • 12 oz
    white or baby bella mushrooms, sliced
  • 1/2 tsp
  • 1 medium
    tomato, diced
  • 1/2 medium
    green bell pepper, diced
  • 3 Tbsp
    fresh cilantro, chopped

How to Make Easy Mushroom Curry


  1. Saute onion in butter or olive oil until soft, about 3-4 minutes.
  2. Add garlic and saute another minute.
  3. Add cumin, coriander, chili powder, turmeric and saute an additional minute.
  4. Add mushrooms and saute until they have released their moisture.
  5. Add tomatoes, green pepper, and salt. Saute until peppers just begin to soften.
  6. Add fresh cilantro and remove from heat.

    May be served over basmati rice, cous cous, sliced hard cooked eggs, poached eggs and toast, rice vermicelli, etc.
