The old monthly magazine is now called Arkansas Living...but back then it was called Rural Arkansas. Here are a couple recipes from "back in the day"...? BTW...it does not say who the recipes were submitted by, so I do not know who to give credit to!!!

Ingredients

  • FIRST RECIPE: COMPANY SPINACH
  • 1/4 cup light cream
  • 1/4 cup chopped onion
  • 1 tablespoon butter
  • 1/4 cup bacon (cooked and chopped)
  • 3 cups hot spinach (chopped)
  • SECOND RECIPE: LEMON CARROTS
  • 12 - young carrots
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon nutmeg
  • some - chopped parsley

How To Make classics from 1970 published in rural arkansas

  • Step 1
    DIRECTIONS FOR FIRST RECIPE: COMPANY SPINACH
  • Step 2
    Sauté onion in the butter, add cream, chopped bacon and spinach. Heat thoroughly. Season with salt and pepper to taste. Serves 6
  • Step 3
    DIRECTIONS FOR SECOND RECIPE: LEMON CARROTS
  • Step 4
    Cook carrots in boiling, salted water until tender. Mix and heat remaining ingredients. Pour over boiled, drained, carrots. Serves 6
