Ingredients
- 1 large spaghetti squash
- 3 medium granny smith apples (or your choice)
- 1 cup brown sugar, firmly packed
- 1/2 cup butter
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cardamom or anise

Step 1Preheat oven to 375º F Wash and rinse squash Cut squash in half lengthwise Remove seeds and membranes Place halves in baking dish cut side up Rub squash with salt

Step 2Peel and core apples, cut into bite sized chunks Stuff each half of squash with apple chunks (it's okay if they are heaped up above the edge of the squash, they will cook "down". In a small saucepan over low heat, melt butter and add brown sugar and spices. DO NOT BOIL. Stir constantly just until sugar and spices are dissolved into butter Remove from heat and drizzle over apples and squash. Cover loosely with heavy duty foil and place in preheated oven Cook for approximately 35 minutes, remove foil and cook 5 to 10 more minutes until apples and squash are nice and tender

Step 3Remove from oven and pull apart squash into spaghetti like strings, blending with apple mixture. Serve while still warm.
