8 ozspinach, frozen chopped
2 Tbspbutter, softened
2 ozcream cheese, room temperature
2 Tbspparmesan cheese
2 Tbsppork rinds, crushed
1 dash(es)soy sauce
How to Make Low Carb Spinach Casserole
- Defrost spinach 2 minutes in the microwave stirring after one minute. Drain and squeeze moisture from spinach.
- Add softened butter, cheese and soy sauce. Mix Parmesan and pork rinds. Add most of this, saving a little for topping. Microwave 30 seconds.
- Cream together until well blended. Top with remaining Parmesan mix. Microwave for 1 minute covered. Let stand 1 minute.
