My kids absolutely devoured the second half of this dish and claimed they liked it better than the original. I guess we're all going to be low carb for the next holiday, at least on this dish. I'll post the original Spinach Artichoke casserole too.

Ingredients

  • 8 oz
    spinach, frozen chopped
  • 2 Tbsp
    butter, softened
  • 2 oz
    cream cheese, room temperature
  • 2 Tbsp
    parmesan cheese
  • 2 Tbsp
    pork rinds, crushed
  • 1 dash(es)
    soy sauce

How to Make Low Carb Spinach Casserole

Step-by-Step

  1. Defrost spinach 2 minutes in the microwave stirring after one minute. Drain and squeeze moisture from spinach.
  2. Add softened butter, cheese and soy sauce. Mix Parmesan and pork rinds. Add most of this, saving a little for topping. Microwave 30 seconds.
  3. Cream together until well blended. Top with remaining Parmesan mix. Microwave for 1 minute covered. Let stand 1 minute.
