low carb spinach artichoke casserole

My kids absolutely devoured the second half of this dish and claimed they liked it better than the original. I guess we're all going to be low carb for the next holiday, at least on this dish. I'll post the original Spinach Artichoke casserole too.

Ingredients

  • 8 ounces spinach, frozen chopped
  • 2 tablespoons butter, softened
  • 2 ounces cream cheese, room temperature
  • 1/4 cup parmesan cheese
  • 1/4 cup pork rinds, crushed
  • 1 tablespoon tamari sauce
  • 1 tablespoon italian seasoning
  • 1/2 can artichoke hearts, quarters

How To Make low carb spinach artichoke casserole

  • Step 1
    Defrost spinach 2 minutes in the microwave stirring after one minute. Drain and squeeze moisture from spinach.
  • Step 2
    Add softened butter, cheese, seasonings and Tamari sauce. Add artichoke hearts and mix well. Mix Parmesan and pork rinds. Add 1/4 cup of cheese mixture, saving the rest for topping. Microwave 30 seconds.
  • Step 3
    Cream together until well blended. Top with remaining Parmesan mix. Microwave for 1 minute covered. Let stand 1 minute. Alternately bake at 350˚ for 20 minutes.
