family favorite spanish rice

This is a Spanish Rice recipe that we have used for over 25 years. Feel free to make it your own by increasing chili powder or red pepper flakes to taste. Great for filling stuffed green peppers, as a side dish or to use with seasoned beef and refried beans as a burrito filling.

Ingredients

  • 1/4 cup butter
  • 1/2 - onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 - carrot, finely chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain rice, uncooked
  • 1 - 14 oz. can diced tomatoes, undrained (can use mexican style)
  • 1 - 8 oz. can tomato sauce
  • 1 1/4 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2-1 teaspoon chili powder or to taste
  • 1/2 teaspoon cumin
  • - red pepper flakes, optional, to taste

How To Make family favorite spanish rice

  • Step 1
    Saute onions, peppers, carrots, celery, garlic and rice in butter until rice is slightly golden and vegetables are tender.
  • Step 2
    Add tomatoes, tomato sauce, water, salt, pepper, chili powder, cumin and red pepper flakes (if using). Stir.
  • Step 3
    Bring to a boil. Cover saucepan, lower heat and simmer on low for 30 minutes or until rice is tender and liquid is absorbed. Serve in individual bowls topped with shredded cheddar cheese, cilantro and/or sour cream to garnish
