ebony, ivory, & bronze friendship salad

After spending an awesome week with my JAP friends in FL/2012, & at the WFC in LV/2013,I decided to create this salad to honor all my girlfriends. They come in all colors, as the rice in this salad. I added some ingredients for each culture. cilantro, & limes for my Mexican friends. Mango, red, green, and yellow peppers for my African American friends. and jalapenos, olive oil, green onions, and almonds for my Caucasian friends. The dressing is a mix of flavors from all cultures, and bind this salad together..much as our friendship is bound by our love for each other. I love you all my chicas.

Ingredients For ebony, ivory, & bronze friendship salad

  • 2/3 cup medium grain white rice, cook as directed on pkg, but a little al dente
  • 2/3 cup brown rice toasted and cooked as directed, but little al dente
  • 2/3 cup black rice, cook as directed on pkg, but a little al dente (it will take twice as long to cook as white rice)
  • 3/4 cup chopped green onions, white & green parts
  • 3/4 cup each chopped red, yellow, and green bell pepper, diced
  • 2-3 jalapeno peppers , seeded and minced. more = more heat
  • 2 large mangos(about 3"x5"), peeled and diced
  • 1/2 cup chopped cilantro
  • DRESSING:
  • 2 limes, zest and juice
  • 1/3 cup oilve oil
  • 1 tbl sesame oil
  • 2 tbl agave necter or sugar to taste)
  • 1 tbl brown mustard
  • 1 tsp of each, cumin & curry powder
  • 1/2 tsp each, salt, dry mustard, smoky paprika, and ground ginger
  • 1/4 tsp each, black pepper, cayenne pepper, and garlic powder
  • 1 cup sliced toasted almonds, optional
  • optional but delicious with these flavors: 2 ripe but firm avocados. diced (squeeze lime juice over them so they don't turn brown.)

How To Make ebony, ivory, & bronze friendship salad

    Cook the white, brown, and black rice separately. By al dente', I mean just a few minutes less..not so that it's crunchy. Let cool 10 minutes and fluff with a fork. Cool in fridge until cold. This can be done a day or two ahead, but be sure to store the rice separately. Otherwise the black rice will tint the white rice.

    While rice is chilling, prepare all veggies and mango. Prepare avocado last and drizzle with lime juice. Toast almonds and make salad dressing.

    Add rice to a large salad bowl with all other salad ingredients. Add all dressing ingredients to a jar, put cover on and shake. Dress salad and chill to let marry for an hour or two before serving. Enjoy!
