Creamy Brown Rice w/ Quinoa....Breakfast too

Really lazy one day, and didn't want to dirty the kitchen. Let's face it, I have days I don't want to prep to cook. On those nights I think crockpot. Well, I brought out the spices, and this is what I did. Enjoy.... Keep it clean

method Slow Cooker Crock Pot

Ingredients

  • CROCPOT SHOULD BE ON HIGH
  • 2 c
    vegetable broth
  • 1/4 c
    coconut milk, unsweetened
  • 1
    shallots
  • 1/2 c
    quinoa
  • tsp
    curry powder
  • tsp
    cumin
  • dash
    turmeric, ground
  • dash
    pepper
  • 1/2 can
    kidney beans, organic canned
  • 1/2 c
    brown rice
  • 1 clove
    garlic, fresh
  • 1 tsp
    ginger, fresh grated
  • pomegrante, dried (for garnish)
  • almonds, slivered (for garnish)

How To Make

  • 1
    Put EVERYTHING in Croc-pot, stir well. Add salt to taste.
  • 2
    Cook for 1 1/2 hours. Cook until rice is tender.
  • 3
    Serve with Dried Pomegrante and slivered almonds
