Ingredients

  • 1 - flour tortillas
  • 1 tablespoon olive oil, extra virgin
  • 5 medium mushrooms, fresh
  • 3 small whole bell peppers or 5 mini bell peppers
  • 1 tablespoon honey barbecue sauce
  • 6 slices rotisserie chicken, deboned
  • 1/2 cup brown or white rice

How To Make chicken rice, peppers n mushrooms tortilla bowl

  • Step 1
    Preheat oven 400 F. Place flour tortilla in a dry sm. cast iron skillet. Bake for 10-12 min. until browned and crispy then remove from skillet.
  • Step 2
    Pour 1 Tbsp. Extra Virgin Olive oil into skillet and fill w/ chopped yellow, green, red, or orange bell peppers, & sliced mushrooms then sautee approx. 5 min. and add 3/4 c. cooked brown rice. cook 5 min. stirring w/ fork. Remove from heat and fill Tortilla Bowl.
  • Step 3
    Place 1 Tbsp. Honey Barbecue Sauce in center of rice medley. Slice Rotisserie chicken adding to top. Serve & Enjoy the eatable Bowl between bites. ' And Yum its all good'.
