A quick and refreshing salad or main Summer meal with fresh ingredients from the garden.

Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon basil, fresh chopped
  • 1 teaspoon sugar
  • 3 cups jasmine rice, cooked
  • 1/2 - tomato, chopped
  • 1 large cucumber, peeled, seeded and chopped
  • 1/4 cup red onion, chopped
  • 1 can black beans
  • - sea salt and pepper to taste

How To Make black bean and rice salad

  • Step 1
    Mix first 4 ingredients together to make the dressing.
  • Step 2
    Cool rice and add all ingredients together. Stir in dressing.
