Ingredients

  • 2 pounds fingerling potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed rosemary
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon coarse grind black pepper
  • 1/4 cup grated parmesan cheese

How To Make roasted fingerling potatoes

  • Step 1
    In a large bowl, toss the potatoes and oil. Sprinkle with seasonings and cheese; toss to coat well.
  • Step 2
    Spread potatoes in a single layer on a foil-lined 15x10x1" baking pan.
  • Step 3
    Roast in a preheated 425-degree oven for 35 to 40 minutes or until potatoes are tender and golden brown, stirring halfway through cooking.
