Another great vegetarian recipe from my friend Lizzy. She adapted the dough from a recipe in Michael Pandya's Indian Vegetarian Cooking.

Ingredients

DOUGH INGREDIENTS

1 c
whole wheat flour
1 - 2 scoop(s)
whey protein concentrate
1/8 tsp
baking powder
1 dash(es)
sea salt
3 Tbsp
coconut or olive oil
cold water
additional oil for frying

FILLING INGREDIENTS

1 or more c
water or broth
2 clove
garlic, minced
1/2 tsp
ginger paste
1 tsp
cumin seeds
1/2 tsp
turmeric, ground
1 tsp
garam masala
1
green chili, minced
coconut or oilive oil for saute
1/2 c
peas, cooked

How to Make Lizzy's Homemade Samosas

Step-by-Step

  • 1DOUGH:
    Combine flour, whey protein concentrate, baking powder, sea salt.
  • 2Mix in 3T coconut or olive oil with fingers until mixture is crumbly.
  • 3Gradually add enough cold water to form a firm pliable while kneading for a few minutes.
  • 4Divide dough into 4 balls. Flatten balls and roll into thin disks. Cut each disk into a half circle. Moisten straight edge with water, fold over to form cone, pinching edge to make seam.
  • 5Fill samosa with cooked filling, moisten edges and pinch to seal.
  • 6Pan fry in coconut or olive oil a few minutes on each side until golden and serve with tamarind sauce.
  • 7FILLING:
    Place potatoes in a pot with a cup or so of water or broth.
  • 8In a separate pan, heat oil and saute green chili for about a minute. Add garlic with ginger paste, cumin seeds, turmeric, garam masala, and saute for another minute.
  • 9Add seasoning mixture to potatoes and cook until potatoes are tender.
  • 10Mash potato mixture and add peas, combining well. Use about 2T to fill samosas (or good to just eat as is).
