Another great vegetarian recipe from my friend Lizzy. She adapted the dough from a recipe in Michael Pandya's Indian Vegetarian Cooking.

Ingredients For lizzy's homemade samosas

  • DOUGH INGREDIENTS
  • 1 c
    whole wheat flour
  • 1 - 2 scoop
    whey protein concentrate
  • 1/8 tsp
    baking powder
  • 1 dash
    sea salt
  • 3 Tbsp
    coconut or olive oil
  • cold water
  • additional oil for frying
  • FILLING INGREDIENTS
  • 4
    potatoes, diced
  • 1 or more c
    water or broth
  • 2 clove
    garlic, minced
  • 1/2 tsp
    ginger paste
  • 1 tsp
    cumin seeds
  • 1/2 tsp
    turmeric, ground
  • 1 tsp
    garam masala
  • 1
    green chili, minced
  • coconut or oilive oil for saute
  • 1/2 c
    peas, cooked

How To Make lizzy's homemade samosas

    DOUGH: Combine flour, whey protein concentrate, baking powder, sea salt.

    Mix in 3T coconut or olive oil with fingers until mixture is crumbly.

    Gradually add enough cold water to form a firm pliable while kneading for a few minutes.

    Divide dough into 4 balls. Flatten balls and roll into thin disks. Cut each disk into a half circle. Moisten straight edge with water, fold over to form cone, pinching edge to make seam.

    Fill samosa with cooked filling, moisten edges and pinch to seal.

    Pan fry in coconut or olive oil a few minutes on each side until golden and serve with tamarind sauce.

    FILLING: Place potatoes in a pot with a cup or so of water or broth.

    In a separate pan, heat oil and saute green chili for about a minute. Add garlic with ginger paste, cumin seeds, turmeric, garam masala, and saute for another minute.

    Add seasoning mixture to potatoes and cook until potatoes are tender.

    Mash potato mixture and add peas, combining well. Use about 2T to fill samosas (or good to just eat as is).
