Irish Mash Potato aka "Champ"

k r

This is especially for my good friend Fireman Bob!
-- The Irish have a very special delicious way way of serving Mash Potato, and its called "Champ" a mixture of potato and spring onion. This is my family's recipe for this dish. We always have it with our Sunday Dinners or especially with Boiled Corned Beef or Bacon.. This is so tasty you could sit back and eat a big bowlful of it on its own. Real comfort food

Hope it brings back some memories Bob
