this is a diabetic healthy breakfast muffin but could be eat anytime during the day.

Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • 6 ounces uncooked regular oats
  • 1 tablespoon baking powder
  • - sugar substitute equalling 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cup skim milk
  • 1 - egg
  • 1/4 cup vegetable oil
  • 1 cup fresh blueberries
  • 1 teaspoon ground cinnamon
  • - vegetable cooking spray

How To Make oatmeal-blueberry muffins

  • Step 1
    Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl; make a well in center of mixture.
  • Step 2
    Combine egg, milk , and oil; add to dry ingrediants, stirring just until moistened. Gently fold in blueberries.
  • Step 3
    Spoon batter into muffin pans coated with cooking spray, filling 2/3 full. Sprinkle cinnamon over muffins, and bake at 425 f for 20 to 25 minutes or until lightly browned. cool and serve
