  • 1 c
    plus 2 tablespoons all-purpose flour
  • 6 oz
    uncooked regular oats
  • 1 Tbsp
    baking powder
  • ·
    sugar substitute equalling 2 tablespoons sugar
  • 1/2 tsp
  • 1 c
    skim milk
  • 1
  • 1/4 c
    vegetable oil
  • 1 c
    fresh blueberries
  • 1 tsp
    ground cinnamon
  • ·
    vegetable cooking spray

How to Make Oatmeal-Blueberry Muffins


  1. Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl; make a well in center of mixture.
  2. Combine egg, milk , and oil; add to dry ingrediants, stirring just until moistened. Gently fold in blueberries.
  3. Spoon batter into muffin pans coated with cooking spray, filling 2/3 full. Sprinkle cinnamon over muffins, and bake at 425 f for 20 to 25 minutes or until lightly browned. cool and serve
