3 cchicken broth or water
1 ccucumber, diced
1 ctomato, diced
1/2 conion, diced
1/2 mediumlemon, juiced
1/4 crice vinegar
How to Make Farro Salad
- Combine farro and water/broth to saucepan. Bring to a boil, reduce heat to low/medium and cook covered for 30 min. Drain and cool.
- Add diced cucumber, tomato, onion and parsley or mint or combination of both (to taste).
- In small bowl, combine juice of 1/2 lemon, honey and rice vinegar. Add to salad. Serve chilled.
Can add toasted walnuts, feta cheese prior to serving.
