How to Make Farro Salad
1Combine farro and water/broth to saucepan. Bring to a boil, reduce heat to low/medium and cook covered for 30 min. Drain and cool.
2Add diced cucumber, tomato, onion and parsley or mint or combination of both (to taste).
3In small bowl, combine juice of 1/2 lemon, honey and rice vinegar. Add to salad. Serve chilled.
Can add toasted walnuts, feta cheese prior to serving.
