Ingredients
- 1 cup farro
- 3 cups chicken broth or water
- 1 cup diced cucumber
- 1 cup diced tomato
- 1/2 cup diced onion
- fresh parsley or mint, to taste
- 1/2 medium lemon, juiced
- 1 - 2 teaspoons honey
- 1/4 cup rice vinegar
- Feta cheese, optional
- toasted almonds, optional
How To Make farro salad

Step 1Combine farro and water/broth in a saucepan. Bring to a boil. Reduce the heat to low/medium, and cook covered for 30 minutes.

Step 2Drain and cool.

Step 3To a bowl, add diced cucumber, tomato, and onion. Add parsley, mint, or a combination of both (to taste).

Step 4In a small bowl, combine the juice of 1/2 lemon, honey, and rice vinegar.

Step 5Add to salad and chill.

Step 6Serve chilled. Can add toasted walnuts and Feta cheese prior to serving.
