Farro is an ancient grain, more easily found now in health food stores. It's crunchy, nutty flavor adapts well to a variety of additional ingredients.

  • 1 c
  • 3 c
    chicken broth or water
  • 1 c
    cucumber, diced
  • 1 c
    tomato, diced
  • 1/2 c
    onion, diced
  • 1/2 medium
    lemon, juiced
  • 1-2 tsp
  • 1/4 c
    rice vinegar

How to Make Farro Salad


  1. Combine farro and water/broth to saucepan. Bring to a boil, reduce heat to low/medium and cook covered for 30 min. Drain and cool.
  2. Add diced cucumber, tomato, onion and parsley or mint or combination of both (to taste).
  3. In small bowl, combine juice of 1/2 lemon, honey and rice vinegar. Add to salad. Serve chilled.
    Can add toasted walnuts, feta cheese prior to serving.
