Ingredients
- 1 cup farro
- 3 cups chicken broth or water
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1/2 cup onion, diced
- 1/2 medium lemon, juiced
- 1-2 teaspoon honey
- 1/4 cup rice vinegar
How To Make farro salad

Step 1Combine farro and water/broth in a saucepan. Bring to a boil, reduce the heat to low/medium, and cook covered for 30 min.

Step 2Drain and cool.

Step 3Add diced cucumber, tomato, onion and parsley or mint or combination of both (to taste).

Step 4In a small bowl, combine the juice of 1/2 lemon, honey, and rice vinegar.

Step 5Add to salad. Serve chilled.

Step 6Can add toasted walnuts and Feta cheese prior to serving.
