Farro is an ancient grain, more easily found now in health food stores. Its crunchy, nutty flavor adapts well to a variety of additional ingredients.

Ingredients

  • 1 cup farro
  • 3 cups chicken broth or water
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup diced onion
  • fresh parsley or mint, to taste
  • 1/2 medium lemon, juiced
  • 1 - 2 teaspoons honey
  • 1/4 cup rice vinegar
  • Feta cheese, optional
  • toasted almonds, optional

How To Make farro salad

  • Step 1
    Combine farro and water/broth in a saucepan. Bring to a boil. Reduce the heat to low/medium, and cook covered for 30 minutes.
  • Step 2
    Drain and cool.
  • Step 3
    To a bowl, add diced cucumber, tomato, and onion. Add parsley, mint, or a combination of both (to taste).
  • Step 4
    In a small bowl, combine the juice of 1/2 lemon, honey, and rice vinegar.
  • Step 5
    Add to salad and chill.
  • Step 6
    Serve chilled. Can add toasted walnuts and Feta cheese prior to serving.
