Ingredients

  • 1 - onion, chopped
  • 6 - cloves garlic chopped
  • 1 - summer squash, in cubes
  • 2 - carrots, chopped
  • 2 - potatoes, cubed
  • 1 tablespoon cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil
  • 1 package couscous
  • 1 can chick peas
  • 2 cups water

How To Make mediterrian couscous

  • Step 1
    Heat olive oil on medium, saute onion for about 5 minutes, add garlic, continue for another 3 mins.
  • Step 2
    add salt, cumin, and chili, saute for 2 minutes. Add chopped squash, carrots, and potatoes. Add 2 cups of water
  • Step 3
    Add rinsed chick peas, cook until vegetables are soft
  • Step 4
    cook couscous as per package direction. Pour cooked vegetables over couscous
