Ingredients
- 1 - onion, chopped
- 6 - cloves garlic chopped
- 1 - summer squash, in cubes
- 2 - carrots, chopped
- 2 - potatoes, cubed
- 1 tablespoon cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon chili powder
- 2 tablespoons olive oil
- 1 package couscous
- 1 can chick peas
- 2 cups water
How To Make mediterrian couscous

Step 1Heat olive oil on medium, saute onion for about 5 minutes, add garlic, continue for another 3 mins.

Step 2add salt, cumin, and chili, saute for 2 minutes. Add chopped squash, carrots, and potatoes. Add 2 cups of water

Step 3Add rinsed chick peas, cook until vegetables are soft

Step 4cook couscous as per package direction. Pour cooked vegetables over couscous
