los alamos national laboratory hominy casserole
All the right textures and ingredients that just sit right with each other. Not kidding! Hominy, sour cream, pimentos, green chiles and cheese...what's not to like. This is not a stand-alone dish. I first had this at a cast party while participating in a play at the Los Alamos Little Theatre in 1990. Someone brought this and it was wonderful.

Ingredients
- 2 cans 16 oz. cans white hominy, drained and rinsed
- 1 large drained, diced pimentos (jar)
- 8 ounces sour cream
- 16 ounces chopped green chile
- 1 1/2 cups shredded cheddar cheese (or colby-jack)
- salt and pepper to taste

Step 1Lightly spray a 9x13 glass dish. Preheat the oven to 350F.

Step 2In a mixing bowl, combine all ingredients and stir to thoroughly combine. Pour into the greased pan and bake for 30 minutes. **You might want to top with more cheese to melt in the end...your choice.
