Ingredients
- - 2 tbsp butter
- - 4 tbsp flour, all purpose
- - 1 1/2 cup milk
- - 1/4 cup cheese, old cheddar, grated
- - 1/2 tsp fresh garlic, minced
- - 1 tsp mustard, whole grain or champagne
- - 1 sprig thyme, fresh
- - 1/2 tsp salt (or to taste)
- - 1/4 tsp black pepper, freshly ground (or to taste)
- - 4 medium leeks with green part removed, halved lengthways
How To Make leeks - baked in cheese

Step 1Preheat oven to 400 degrees F; grease pan and set aside until needed.

Step 2Put frying pan on low heat, add butter and melt, then stir in flour until smooth (about 2 minutes). You want to gradually stir in the milk and then the cheese, mixing well, making sure everything is melted.

Step 3Season with the garlic, mustard, salt and pepper, mix and taste. Adjust the seasonings if necessary, then add in the thyme sprig and remove from heat.

Step 4In your prepared pan, place the leeks in a single layer and top with the cheese sauce.

Step 5Bake for 30 - 35 minutes, the leeks should be tender and the sauce should be nice and bubbly.
