I was invited by some dear friends for Christmas dinner.... I couldn't go without taking something, so I cooked up a Stuffed Pork Loin, recipe to follow... I thought I don't want to waste anything so I came up with this recipe with the left over broccoli and asparagus and some Asiago cheese... Turned out to be a real winner ! Ingredients
- 2 to 3 cups broccoli stems - what you would throw away
- 3/4 pound asparagus, fresh - chopped into small chunks
- 1 to 2 cans chicken stock - no salt - or your homemade
- 8 ounces cream cheese
- 1/2 pound asiago cheese - thin sliced
- 1/2 teaspoon course sea salt - or to taste
- 1/2 teaspoon cracked black pepper - or to taste

Step 1Take the broccoli stems, asparagus and cut into small chunks... Boil in chicken stock till soft, drain, add salt and pepper Add cream cheese and combine... Place in a casserole dish

Step 3Place the sliced cheese on top and bake for 30 minutes or till cheese is melted and golden brown...
