creamy mozzarella & parm mac chse w/ panko
I created this version of Mac & Cheese from ingredients I had on hand,because my husband wanted Mac & Cheese & I did not have cheddar. I wanted it to be creamy & crunchy as well as flavorful all at the same time. He really liked it. He asked me had I made the recipe before, I replied I created it as I went along, & I then asked why, he said because it was really good. I was happy to hear that. I figured the cream cheese would make it creamy,the parmesan would add lots of depth, & the mozzarella would make it gooey good. Then adding Panko on top with butter gave it the crunch it neeed.

Ingredients
- 1 pound elbow macaroni, cooked al dente'
- 1 stick butter
- 1 cup shredded parmesan
- 1 package 8 oz. cream cheese softened, cubed
- 3 cups shredded mozzarella cheese
- 1 1/2 teaspoons coarse black pepper
- 1/2 teaspoon kosher salt, if needed
- 3 large eggs, room temperature
- 1 large can evaporated milk (12 oz.)
- 1 tablespoon dried parsley or chopped chive
- PANKO BREAD CRUMB TOPPING
- 1 1/4 cups panko bread crumbs
- 2 teaspoons dried parsley
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1/3 cup parmesan cheese
- 6 tablespoons butter melted
How To Make creamy mozzarella & parm mac chse w/ panko

Step 1Preheat oven to 350 degrees F. Spray or grease a 9X13 X2 inch casserole dish Set aside till needed. Cook pasta according to package directions until AL DENTE', about 7 minutes or so. Drain and return to cooking pot or large bowl.

Step 2Add butter & salt and stir.

Step 3Add cubed cream cheese, shredded parmesan & parsley, then stir to combine.

Step 4Crack 3 eggs into a bowl.

Step 5Add large can of evaporated milk to cracked eggs, and beat together to combine.

Step 6Add black pepper, mozzarella, and egg mixture to pasta.

Step 7Stir to combine.

Step 8Pour into prepared casserole dish.

Step 9Combine panko bread crumbs with parsley, paprika, onion powder, & parmesan, then stir to blend together.

Step 10Add melted butter, and stir to blend. Then sprinkle over top of macaroni and bake in preheated 350 degree oven for 20 to 30 minutes, until mixture is hot and bubbly.

Step 11When topping is browned remove from oven.

Step 12Serve while hot.

Step 13Serve with your main course and other vegetable side items.Panko Bread Crumbs is a Japanese Bread Crumb, which is larger in texture & much more chrispier than traditional bread crumbs. Best value for your dollar is usually found by ordering on line.
