yellow rice with raisins

This tasty rice recipe comes from South Africa. This is very different from the rice you are probably accustomed to eating. The turmeric gives it a bright yellow color and helps to create a delightful exotic flavor. The raisins and cinnamon gives it a touch of sweetness even without the sugar that I usually leave out. If you want to give your taste buds a treat give this a try next time you make rice. The directions are for stove top but I normally put everything in the rice cooker and everything comes out great with less effort.

Ingredients

  • 3 cups water
  • 1 teaspoon sugar
  • 1/4 teaspoon turmeric, ground
  • 1 tablespoon butter
  • 1 - cinnamon stick
  • 1/4 cup yellow raisins
  • 1 slice lemon
  • 1 cup white rice

How To Make yellow rice with raisins

  • Step 1
    Bring water to a boil.
  • Step 2
    Add sugar, turmeric, margarine, cinnamon stick, raisins, and lemon slice, stirring well.
  • Step 3
    Add rice and cover. Simmer for approximately 20 minutes, stirring occasionally until all liquid is absorbed and rice is tender.
  • Step 4
    Remove cinnamon stick and lemon slice. Serve immediately.
