This recipe is from my friend Laura from Minnesota- her family makes this a traditional side dish every Christmas. Made with long-grain, wild rice, that will keep you warm on a cold winter day! And now is enjoyed by my family too. I like to serve it with my pork chops too.
Sauté celery and onion in butter in a large skillet until tender.
In a large bowl, combine the next 4 ingredients.
Mix in celery mixture, bread pieces and rice.
Spoon mixture into a greased or sprayed 1 1/2 quart casserole.
Cover with foil and bake at 350^ for 20 minutes.
Uncover and bake 15 to 20 minutes more or until set.
