slap together rice

I only grocery shop 1 time a month, saves lots of money monthly, instead of buying junk everyweek on impulse. Just try to plan ahead, so at the end of the month I am cabinet and produce scraping. It was just a throw together rice dish but my whole family loved it and made me write it down so I will not forget. I guess the best recipes come from a blip in our imagination.

Ingredients
- 1 box any intant rice, i used uncle ben's whole grain white rice long grain
- 1 can whole corn (drained)
- 1 can pinto beans (drained and rinsed)
- 1/2 - green pepper (chopped small)
- 2 - slices of a large white cooking onion (chopped small)
- 1 tablespoon chopped garlic (fresh or from jar)
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 2 tablespoons butter or marg.
How To Make slap together rice

Step 1Make rice according to package. While rice is cooking, chop up the pepper, onion slices, garlic, and drain corn and pinto beans. In a microwave dish add all the copped ingredients, corn, beans, plus the 2 tablespoons of butter. Microwave till hot. The onions and peppers will get soft and butter will melt. Add this mixture to the rice when it is done. Add the cumin and red pepper flakes. Salt and pepper to taste to your liking if you think it needs it. I did not. And mix. Serve hot.
