Ingredients

  • 2 teaspoons canola oil
  • 1 cup basmati rice, rinsed
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon finely grated lemon zest, plus additional for garnish
  • 1-1/2 tablespoon fresh lemon juice
  • 2 cups low-sodium chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

How To Make lemon basmati rice

  • Step 1
    In a 2-1/2-qt. saucepan over medium heat, heat the oil until shimmering. Cook rice, ginger, and zest, stirring, until fragrant, about 1 minute.
  • Step 2
    Stir in lemon juice, broth, salt and pepper, and bring to a boil. Reduce heat to low and simmer, covered, until liquid is absorbed, 18 to 20 minutes.
  • Step 3
    Let stand, covered, off heat for 5 minutes. Fluff with a fork and garnish with additional zest.
  • Step 4
    For a little kick, add a clove of minced garlic. May also substitute ground ginger for fresh.
