After trying basmati rice several years ago I almost don't want to go back to plain rice. There is nothing like the flavor and aroma of basmati.

Ingredients

  • 2 tsp
    canola oil
  • 1 c
    basmati rice, rinsed
  • 1 Tbsp
    minced fresh ginger
  • 1 tsp
    finely grated lemon zest, plus additional for garnish
  • 1-1/2 Tbsp
    fresh lemon juice
  • 2 c
    low-sodium chicken broth
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper

How to Make LEMON BASMATI RICE

Step-by-Step

  1. In a 2-1/2-qt. saucepan over medium heat, heat the oil until shimmering. Cook rice, ginger, and zest, stirring, until fragrant, about 1 minute.
  2. Stir in lemon juice, broth, salt and pepper, and bring to a boil. Reduce heat to low and simmer, covered, until liquid is absorbed, 18 to 20 minutes.
  3. Let stand, covered, off heat for 5 minutes. Fluff with a fork and garnish with additional zest.
  4. For a little kick, add a clove of minced garlic. May also substitute ground ginger for fresh.
