Ingredients
- 2 teaspoons canola oil
- 1 cup basmati rice, rinsed
- 1 tablespoon minced fresh ginger
- 1 teaspoon finely grated lemon zest, plus additional for garnish
- 1-1/2 tablespoon fresh lemon juice
- 2 cups low-sodium chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
How To Make lemon basmati rice

Step 1In a 2-1/2-qt. saucepan over medium heat, heat the oil until shimmering. Cook rice, ginger, and zest, stirring, until fragrant, about 1 minute.

Step 2Stir in lemon juice, broth, salt and pepper, and bring to a boil. Reduce heat to low and simmer, covered, until liquid is absorbed, 18 to 20 minutes.

Step 3Let stand, covered, off heat for 5 minutes. Fluff with a fork and garnish with additional zest.

Step 4For a little kick, add a clove of minced garlic. May also substitute ground ginger for fresh.
