2 clong grain rice

3 cchicken broth

1 cancoconut milk

2 Tbspbutter

1 cred/yellow/green peppers, diced

1/2 csliced scallions
-
1 clovegarlic, minced
-
1 canblack beans, drained
-
1 canpineapple chunks with juice

1 canmandarin oranges with juice

1/2 tspcurry powder
-
1/2 tspdried ginger
-
1/2 tspseasoned salt

2lime, juice and zest
-
2 tspcilantro, fresh, chopped

salt and pepper to taste
How To Make instant pot tropical rice

1Add rice, coconut milk, chicken broth and juice from pineapple and mandarin oranges in the Instant Pot (any brand electric pressure cooker is fine). Cook according to directions.

2Melt butter in a medium skillet. Saute peppers and white part of the scallions for a couple minutes to soften. (Reserve the green part for garnish). Add garlic and saute a minute more.

3In a large bowl add all ingredients except remaining scallions and stir to combine. Add salt and pepper to taste. Garnish with scallions to serve.
