Ingredients

  • 11 ounces couscous
  • - feta cheese
  • 30 ounces chick peas
  • 1/2 cup red onion
  • 1 - cucumber
  • - evoo
  • - lemon juice
  • - salt and pepper
  • - fresh parsley

How To Make couscous salad with chickpeas

  • Step 1
    Cook couscous according to directions. Rinse and drain.
  • Step 2
    Chop onion, cucumber and parsley. Rinse and drain chick peas.
  • Step 3
    Add all dry ingredients and toss with EVOO, lemon juice and salt and pepper. Go light. You can always add more.
