carribean style red beans & rice

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 small onion, diced
- 1 small red bell pepper, finely diced
- 4 cloves garlic, minced
- 1 cup long grain white rice
- 1/2 teaspoon all spice berries
- 1/2 teaspoon whole cloves
- 1 teaspoon sliced, fresh ginger root
- 2 1/2 cups vegetable broth
- 1 can red beans, drained and rinsed
- 2 teaspoons chopped fresh thyme or 1 tsp. dried crushed thyme
- freshly chopped cilantro or fresh parsley for garnish
- salt & pepper to taste
How To Make carribean style red beans & rice

Step 1heat olive oil in pan.

Step 2Add onions & peppers. Saute' until softened and fragrant. Add garlic and saute for a few minutes more.

Step 3Add rice and saute' until rice has browned a bit.

Step 4Pour in the 2 1/2 cups vegetable broth.

Step 5Place ginger, cloves and allspice in a tea ball or tie up in a coffee filter or cheese cloth. Add them to pan then add beans and chopped thyme. Cover and turn heat to low.

Step 6Cook about 20 minutes or until all of liquid has absorbed.

Step 7Remove tea ball. Add salt and pepper to taste, and chopped cilantro or parsley. Gently fluff with a fork.
