Tropical Yams - Healthy Thanksgiving dish

Ingredients

6 - 8 mediumgarnet yams 2 tsp.

1/2 ccoconut milk or crème

1 1/2 cchopped pineapple reserve ½ cup for the top

3/4 cchopped pecans, reserve ¼ cup for top

1/2 cagave nectar

1 Tbspcinnamon

1/4 tspnutmeg

1/8 tspcloves

·salt to taste
How to Make Tropical Yams - Healthy Thanksgiving dish
- Peel and cube the yams. Place in a 9X12 pre-oiled baking dish. Spray or drizzle oil (I use butter) on them. Cook at 350 for 30 minutes or until done. Mash the yams, add the coconut milk, agave nectar, pineapple, pecans, and seasonings. Mix well, put back in the baking pan, sprinkle with the reserved pineapple and pecans and serve.
- You can make this dish the day before and then reheat it in the oven or microwave right before serving. I like sprinkling the pecans on the top right before putting it on the table.
