This is a healthy alternative to Sweet Potatoes with brown sugar and marshmallows. It's like a vacation in your mouth!

Ingredients

  • 6 - 8 medium garnet yams 2 tsp.
  • 1/2 cup coconut milk or crème
  • 1 1/2 cups chopped pineapple reserve ½ cup for the top
  • 3/4 cup chopped pecans, reserve ¼ cup for top
  • 1/2 cup agave nectar
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • - salt to taste

How To Make tropical yams - healthy thanksgiving dish

  • Step 1
    Peel and cube the yams. Place in a 9X12 pre-oiled baking dish. Spray or drizzle oil (I use butter) on them. Cook at 350 for 30 minutes or until done. Mash the yams, add the coconut milk, agave nectar, pineapple, pecans, and seasonings. Mix well, put back in the baking pan, sprinkle with the reserved pineapple and pecans and serve.
  • Step 2
    You can make this dish the day before and then reheat it in the oven or microwave right before serving. I like sprinkling the pecans on the top right before putting it on the table.
