I have had this recipe for a long time . My brother-in-law likes to make this often when we visit..he gave this recipe to me so I make it myself now..this is a meal in itself. He bakes his potatoes n the oven--I like to use the microwave....so much faster....I hope you like Carlo's recipe.
1Pierce potatoes on side with a sharp knife and place on a paper plate and cook in your microwave for about 5 to 10 minutes until tender- checking on them at 5 minutes by squeezing them with a oven mitt for doneness. Or bake in 425^ oven for 50 minutes.
2In a large skillet over medium heat,heat oil. Cook onion for 4 minutes, until soft. Add garlic,cumin and cinnamon;cook another minute.
3Add and scramble ground beef and cook until no longer pink , about 5 minutes. Add sherry or juice; cook 2 minutes.
4Add tomatoes, raisins, olives, capers and salt; reduce heat and simmer,5 minutes;stir in chopped cilantro.
Cut open potatoes and mash insides with a fork; divide beef mixture evenly among the potatoes and add a bit of shredded cheese ,if desired and accent with some cilantro leaves . Enjoy!
