  • 3/4 c
    pineapple juice
  • 5
    mashed sweet potatoes or
  • 2 can(s)
    pumpkin or squash
  • 2
  • 1 Tbsp
  • 1 tsp
    vanilla extract
  • 1/2 c
    crushed pecans
  • 1/2 c
    chopped dates and apricots or
  • 1/2 c
    crushed freeze dried fruit

How to Make Sweet Potato Pineapple Custard


  1. Combine first five ingredients, using pumpkin, sweet potatoes or squash. Bake on 350 for 35-40 minutes. Sprinkle with pecans and crushed freeze dried fruit.
