Makes about 2 1/2 cups or enough for 1 pound of pizza dough Go ahead and double or triple this recipe if you want to keep some flour on hand. Just transfer the blend to an airtight storage container (bpa free if plastic) Store in a cool, dry place or in the refrigerator.

Ingredients

  • 1 1/2 cups white rice flour, bob's red mill, prefer.
  • 3/4 cup tapioca flour, shiloh farms as example
  • 1/4 cup plus 2 tbsp. potato starch, bob's red mill, prefer.
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons xanthum gum, bob's red mill, prefer.

    In a large enough bowl, whisk together all ingredients.
