Notes from the Test Kitchen:
These potatoes are definitely sassy and savory, I literally wanted to lick my plate they were so good. The cheese sauce has plenty of seasoning and even has a little kick to liven up the potatoes. I also love the flavor the fresh onions gives the dish - an extra punch of flavor. These potatoes would be great for a potluck or a side with your holiday ham or roast. Delish!

4-5 large
onion; diced
3 Tbsp
3 Tbsp
all-purpose flour
1/2 tsp
kosher salt
1/2 tsp
black pepper
1/2 tsp
cayenne pepper
1/4 tsp
garlic powder
2 c
1 1/2 c
shredded sharp cheddar cheese

1Preheat oven to 350.
2Peel potatoes.
3Cut in half lengthwise and slice potatoes.
4Butter baking dish/pan and layer in potatoes. Sprinkle in half of the diced onion.
5Melt butter in saucepan, sprinkle in the flour and cook on medium heat until bubbly.
6Sprinkle in salt, pepper, cayenne and garlic powder. Add milk.
7Stir until thickened and close to boil.
8Take off heat and add cheese.
9Stir until cheese is smooth and melted.
10Pour half the cheese sauce over first layer of potatoes.
11Add the remaining potatoes and diced onions to dish.
12Pour the remaining sauce over the top... spread out over all potato and onion mixture. Sprinkle with a bit of cayenne.
13Cover with foil and bake 1.5 hours.
14Pull off foil for last 30 minutes to brown. Let set on counter 5-10 minutes. Serve and enjoy :)
