Ingredients
- 1/2 tablespoon coarse sea salt, or more to taste
- 3 pounds unpeeled red potatoes, washed and scrubbed
- 3 tablespoons butter
- 2 tablespoons chive butter
- 1 large head of garlic, roasted and mashed
- freshly ground black pepper, to taste (i always use mixed peppercorns)
- 1/2 cup light sour cream, or to taste
- 1/4 cup milk
- 1/4 to 1/2 teaspoon garlic salt, or to taste
How To Make roasted garlic mashed potatoes

Step 1In a large pot, add some coarse sea salt then potatoes. Pour in cold water to about 2 inches above.

Step 2Cover and bring to a boil. When it gets there, remove the lid and continue cooking until the potatoes are tender, about 17 to 20 minutes.

Step 3Drain potatoes well and mash them. Add both butters and mash again.

Step 4Add roasted garlic and freshly ground black pepper; mash once again.

Step 5Add sour cream and milk; stir to blend; taste and adjust if necessary. Add garlic salt if wanted and stir well before serving.
