roasted garlic mashed potatoes

Tasty and easy, this is the perfect side for many proteins. A delicious change from regular mashed.

Ingredients

  • 1/2 tablespoon coarse sea salt, or more to taste
  • 3 pounds unpeeled red potatoes, washed and scrubbed
  • 3 tablespoons butter
  • 2 tablespoons chive butter
  • 1 large head of garlic, roasted and mashed
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1/2 cup light sour cream, or to taste
  • 1/4 cup milk
  • 1/4 to 1/2 teaspoon garlic salt, or to taste

How To Make roasted garlic mashed potatoes

  • Step 1
    In a large pot, add some coarse sea salt then potatoes. Pour in cold water to about 2 inches above.
  • Step 2
    Cover and bring to a boil. When it gets there, remove the lid and continue cooking until the potatoes are tender, about 17 to 20 minutes.
  • Step 3
    Drain potatoes well and mash them. Add both butters and mash again.
  • Step 4
    Add roasted garlic and freshly ground black pepper; mash once again.
  • Step 5
    Add sour cream and milk; stir to blend; taste and adjust if necessary. Add garlic salt if wanted and stir well before serving.
