Microwave Sweet Potatoes

Linda Faye Lober

Who has time to candy and bake and peel sweet potatoes!
After my niece brought half cooked sweet potatoes to a family dinner, I learned this trick!
You can nuke them and they taste just a well as if you cooked them for an hour and a half.
Salvaged them and now this is the way Thanksgiving goes in the microwave.

1Wash sweet potatoes and pierce top side with fork, allows steam to escape and not explode in microwave.
2IMPORTANT on a microwave safe dish (Nordic ware)
align 6 sweet potatoes.
there needs to be a 2 inch space between them
3Cook 10-12 minutes, or hit the baked potato setting.
Potato is done when you can insert fork in and goes through to the other side.
4Remove potatoes, cut in half and garnish as desired.
Brown sugar, pecans, butter, whip cream, marshmallows. Your choice.
You can even cut them up and put in a casserole dish to make your favorite sweet potato recipe.
Just gives you a head start on the cooking time!
