Well, I promised and I always deliver. This is my NOT SO BEGGED FOR chunky potato salad that gets always get eaten and disappears twice as fast as my BEGGED FOR potato salad! Go figure! HAHAHA! Cooking is such fun, isn't it? My oldest grandson Scott is a born and bred Louisianian who loves his MawMaw Marilyn's gumbo and along with it chunky cold potato salad! So I came up with this version of cold, chunky potato salad and it seems to be a hit...although it is beyond my reasoning why it is not so begged for! LOL

Ingredients
- 5 cups potatoes, cooked & diced
- 4 - eggs, hardboiled
- 2 cups mayonnaise
- 1 small onion, diced
- 1/4 cup bell pepper, diced
- 2 stalks celery, diced
- 1 tablespoon celery seed
- 1 teaspoon celery salt
- 1 tablespoon parsley, diced
- 1 cup dill pickles, chopped
- 1/4 cup sweet pickle relish
- - salt & pepper to taste
- 1 tablespoon mustard
How To Make marilyn's also begged for chunky potato salad

Step 1Boil or bake potatoes. Cool, peel and dice

Step 2Chop rest of vegetables and add with seasonings to potatoes.

Step 3Add just enough mustard to make a creamy yellow. Refrigerate at least 4 hours before serving to allow flavors to marry.
