Ingredients

  • 2 1/2 pounds muti colored potatoes
  • 2 ounces turkey pepperoni,
  • 3 ounces black olives
  • 1/2 jar capers
  • 3-4 slices roasted red peppers, sliced
  • 1/3 pound blanched asparagus
  • 1 small sweet onion
  • 1 1/2 tablespoons lemon grass, i used frozen chopped
  • 3/4 cup evoo ( you can use less)
  • 1/8 cup fresh lemon juice
  • 1/8 cup fresh lime juice
  • 1 tablespoon everglades seasoning
  • 1 tablespoon herbes de provence
  • 1/2 tablespoon crushed red pepper
  • 3 small garlic cloves

How To Make lymon lyme konfetti potato salad

  • Step 1
    Slice potatoes. Boil potatoes unitl fork tender
  • Step 2
    Slice all the veggies, pepperoni and grate garlic
  • Step 3
    Blanch the asparagus in hot salty water for 3 minutes. Remove and place in an ice bath and drain
  • Step 4
    Mix evoo, juices, everglades, herbs, red pepper and garlic.
  • Step 5
    In a mixing bowl, combine add all veggies, and pepperoni
  • Step 6
    Add potatoes to veggies and toss well. Put in a large salad bowl and enjoy!
