  • 2 1/2 lb
    muti colored potatoes
  • 2 oz
    turkey pepperoni,
  • 3 oz
    black olives
  • 1/2 jar(s)
  • 3-4 slice
    roasted red peppers, sliced
  • 1/3 lb
    blanched asparagus
  • 1 small
    sweet onion
  • 1 1/2 Tbsp
    lemon grass, i used frozen chopped
  • 3/4 c
    evoo ( you can use less)
  • 1/8 c
    fresh lemon juice
  • 1/8 c
    fresh lime juice
  • 1 Tbsp
    everglades seasoning
  • 1 Tbsp
    herbes de provence
  • 1/2 Tbsp
    crushed red pepper
  • 3 small
    garlic cloves

How to Make Lymon Lyme Konfetti Potato Salad


  1. Slice potatoes. Boil potatoes unitl fork tender
  2. Slice all the veggies, pepperoni and grate garlic
  3. Blanch the asparagus in hot salty water for 3 minutes. Remove and place in an ice bath and drain
  4. Mix evoo, juices, everglades, herbs, red pepper and garlic.
  5. In a mixing bowl, combine add all veggies, and pepperoni
  6. Add potatoes to veggies and toss well. Put in a large salad bowl and enjoy!
