A leaner version of mashed potatoes, using heart-healthy olive oil in place of butter and cooked in chicken or vegetable broth for added flavor and nutrition. These are also dairy-free for those who must avoid milk products.

  • 2 lb
    baking or all-purpose potatoes
  • 4 c
    chicken or vegetable broth
  • 1 c
    chicken or vegetable broth (reserved)
  • 2 Tbsp
    olive oil
  • 1 tsp
  • 1/4 tsp

How to Make Healthier Mashed Potatoes


  1. Scrub or peel potatoes. Cook in 4 cups of broth 25 - 30 minutes until tender. Drain, reserving broth.
  2. Mash with 1 cup of reserved broth, olive oil, salt and pepper. (Freeze remaining broth for another use)
