A leaner version of mashed potatoes, using heart-healthy olive oil in place of butter and cooked in chicken or vegetable broth for added flavor and nutrition. These are also dairy-free for those who must avoid milk products.

Ingredients

  • 2 pounds baking or all-purpose potatoes
  • 4 cups chicken or vegetable broth
  • 1 cup chicken or vegetable broth (reserved)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

How To Make healthier mashed potatoes

  • Step 1
    Scrub or peel potatoes. Cook in 4 cups of broth 25 - 30 minutes until tender. Drain, reserving broth.
  • Step 2
    Mash with 1 cup of reserved broth, olive oil, salt and pepper. (Freeze remaining broth for another use)
