A leaner version of mashed potatoes, using heart-healthy olive oil in place of butter and cooked in chicken or vegetable broth for added flavor and nutrition. These are also dairy-free for those who must avoid milk products.

4 cchicken or vegetable broth

1 cchicken or vegetable broth (reserved)

2 Tbspolive oil

1 tspsalt

1/4 tsppepper
How to Make Healthier Mashed Potatoes
- Scrub or peel potatoes. Cook in 4 cups of broth 25 - 30 minutes until tender. Drain, reserving broth.
- Mash with 1 cup of reserved broth, olive oil, salt and pepper. (Freeze remaining broth for another use)
