- 2 pounds baking or all-purpose potatoes
- 4 cups chicken or vegetable broth
- 1 cup chicken or vegetable broth (reserved)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make healthier mashed potatoes

Step 1Scrub or peel potatoes. Cook in 4 cups of broth 25 - 30 minutes until tender. Drain, reserving broth.

Step 2Mash with 1 cup of reserved broth, olive oil, salt and pepper. (Freeze remaining broth for another use)
