Love Soup, and I needed to find one a diabetic could eat for a friend, to have dinner with, and still be Healthy, So I found this one also in a diabetic magazine. So I tried this and it was really a good hearty healthy soup. I am not a ground turkey person, but you never knew it was in this soup. So remember Just because your Diabetic You can still eat Flavorful and Yet Healthy too.

Ingredients

  • 8 oz - extra lean ground beef
  • 8oz - ground turkey, uncooked
  • 2 C - chopped onion
  • 2 - carrots, chopped or shredded
  • 2 stlks - celery, sliced thinly
  • 2 - garlic cloves, minced
  • 6 C - low sodiun beef broth
  • 2 - 14oz cans diced tomatoes
  • 1 tsp - dried thyme, crushed
  • 1/2 tsp - dried rosemary, crushed
  • 1/4 tsp - salt & pepper, to taste
  • 2 med - chopped and diced potatoes ( 2 cups)
  • 2 cups - cabbage chopped (optional)
  • VEG BEEF SOUP (DIABETIC FRIENDLY)

How To Make hamburger soup by freda

  • Step 1
    in a large pot or Dutch oven, cook meatsm onion, carrots, celery, and garlic, til meat is browned, and vegies are tender. Drain off any fat.
  • Step 2
    add beef broth undrained tomatoes, spices, salt and pepper. Bring to Boiling. Stir in potatoes last. reduce heat, cover, simmer about 10-15 min. til vegies are tender. garnish with more sage if needed. makes 12 cups.
  • Step 3
    NOTE:DIABETIC FRIENDLY. calories 103 per cup Carbs (g)10 Diabetic exchanges: starch 5 veg 1 Lean meat 1
