fingerling potatoes with parmesan butter
Lately I've been getting a lot of these marvelous fingerling potatoes from my organic delivery company. In looking for different ways to prepare them, I came up with this simple and delicious recipe.

Ingredients
- 3 pounds fingerling potatoes
- 1/4 cup (1/2 stick) butter
- - salt and pepper to taste
- 1/4 cup parmesan, romano, and asagio cheeses
- 1/2 teaspoon dried rosemary
How To Make fingerling potatoes with parmesan butter

Step 1Scrub potatoes but do not peel; dry off and set aside.

Step 2In a small saucepan, melt butter. Add salt and pepper; stir.

Step 3Roll potatoes in butter and place on a baking pan that has been sprayed with cooking spray.

Step 4Using a pair of tongs, turn the potatoes as you sprinkle them with the cheeses and then the rosemary.

Step 5Bake in a preheated 350-degree oven for about 40 minutes or until fork-tender. Serve with more butter or sour cream.

Step 6May also bake in a hotter oven (450) for 20 minutes.
