- 3 cups chopped cabbage
- 8 - green onions with tops finely sliced
- 2-3 tablespoons milkl
- 1 tablespoon butter
- 1/2 teaspoon salt
- 2 tablespoons minced parsley
- 1/4 teaspoon black pepper
How To Make colcannon

Step 1PEEL AND QUARTER POTATOES. IN A LARGE PAN, COVER THE POTATOES WITH WATER. BRING TO A BOIL OVER HIGH HEAT. LOWER THE HEAT AND SIMMER, COVERED FOR 20-25 MINUTES OR UNTIL TENDER. DRAIN.

Step 2MEANWHILE, IN ANOTHER PAN, BRING 1/2 INCH OF WATER TO A BOIL OVER HIGH HEAT. ADD THE CABBAGE AND ONIONS. LOWER HEAT AND SIMMER COVERED, FOR 8-10 MINUTES OR UNTIL TENDER. DRAIN.

Step 3IN A MEDIUN SIZED BOWL, WITH AN ELECTRIC MIXER ON LOW, BEAT THE POTATOES UNTIL ALMOST SMOOTH. ADD THE MILK, BUTTER, SALT AND PEPPER. BEAT UNTIL LIGHT AND FLUFFY. STIR IN CABBAGE MIXTURE AND PARSLEY.
