Ingredients

  • 2/3 cup heavy cream
  • 2 - leeks
  • 2 cups green cabbage
  • 1 pound potatoes
  • 1/2 cup butter

How To Make colcannon

  • Step 1
    Peel potatoes and boil until soft. Drain and keep covered.
  • Step 2
    Finely chop leeks and cabbage. Saute' in butter until soft.
  • Step 3
    Add to potatoes with cream and mix until smooth. Salt and Pepper to taste
