herb and lemon couscous

A good, easy and quick side for chicken or fish. Do not use the pearl type couscous.

Ingredients

  • 1 1/4 cups chicken broth, low-fat
  • 1 teaspoon dried parsley
  • 1 teaspoon dried chives
  • 1 teaspoon dried basil
  • 1 - lemon, juice and zest of
  • 1/4 teaspoon salt
  • 1 cup couscous, uncooked (not israeli type)

How To Make herb and lemon couscous

  • Step 1
    Combine all ingredients EXCEPT couscous in a saucepan and bring to a boil.
  • Step 2
    Remove from heat and stir in couscous. Cover and let stand off heat for 5 minutes.
  • Step 3
    Fluff with a fork and serve.
