Peppers and snap peas would be great additions. You could also add a teaspoon of sriracha to the sauce just to heat things up a little bit. Ingredients
- 454 grams soba noodles
- 2 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon brown sugar
- 1 teaspoon black sesame seeds
- 1 tablespoon vegetable oil
- 397 grams firm tofu
- 1 cup cabbage
- 1 clove garlic
- 397 grams chicken breast
- 85 grams carrots
- salt and pepper to taste
How To Make guilt-free stir-fried soba noodles

Step 1In a large pot of boiling water, cook the noodles according to the instructions on the package. Drain and rinse with cold water, set aside

Step 2Mince the garlic.

Step 3Shred the cabbage

Step 4Julienne the carrots

Step 5Chop the tofu into rectangular strips

Step 6Cut the chicken breast into bite-sized pieces

Step 7Heat oil in a wok and saute garlic until fragrant.

Step 8Add the chicken and saute for 2 minutes.

Step 9Add the tofu, mix well and saute for another minute.

Step 10Add the carrots and cabbage and saute for another 2 minutes.

Step 11Add the soba noodles and crank up the heat and saute for 2 minutes.

Step 12In a small bowl, mix the soy sauce, sesame oil, and brown sugar.

Step 13Add the sauce and saute the mixture for 1 minute until fully incorporated.

Step 14Top with black sesame seeds.
