My daughter went through a phase where she liked cinnamon and turmeric in dishes, usually with some type of dried fruit. This was created with her in mind.

Ingredients

  • 1 cup thinly sliced green onions
  • 2 tablespoons butter, melted
  • 2 cans italian style tomatoes, drained and chopped (2 14- ounce cans)
  • 1 can water plus 2 tablespoons
  • 1 cup currants or raisins
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups couscous, uncooked
  • 1/4 cup minced fresh parsley

How To Make spicy couscous

  • Step 1
    Saute the green onions in butter in a large skillet over medium heat until tender.
  • Step 2
    Add the tomatoes and the next 5 ingredients; stir well. Bring to a boil; stir in the couscous.
  • Step 3
    Cover and remove from heat, and let stand for 5 minutes or until the liquid is absorbed. Stir in the parsley and serve immediately.
