This is an old recipe that I found when cleaning out my mother's recipes after she passed away. From what I can tell, it was usually served as a side at dinner.....often with pork chops, ham, or steak.

Ingredients

  • 8 cups water
  • 1 teaspoon salt
  • 2 cups quick-cooking grits, uncooked
  • 1 cup butter
  • 6 ounces roll of process cheese with garlic
  • 1/4 cup dry sherry
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon hot sauce
  • 1/4 teaspoon ground red pepper
  • 2 large eggs, lightly beaten

How To Make southern grits

  • Step 1
    Combine water and salt in a large saucepan; bring to a boil. Stir in the grits; cover, reduce heat, and simmer for 10 minutes, stirring occasionally. Remove from the heat.
  • Step 2
    Add the butter and the next 5 ingredients, stirring until the butter and cheese melt. Stir in the eggs.
  • Step 3
    Spoon the mixture into a greased 13 x 9 x 2 inch baking dish; sprinkle with additional ground red pepper to taste if desired. Bake, uncovered, at 350 degrees for 1 hour and 15 mnutes or until set.
